This is a Pizzeria Uno Favorite made at home with a croissant crust, creamy garlic red skin mashed potatoes, crumbled turkey bacon and cheddar cheese topped with greek yogurt and chives!

Ingredients:
- 1 Croissant Tube
- 6 Redskin Potatoes
- 4 Turkey Bacon Strips
- 1 Cup Shredded Cheddar Cheese
- 4 oz Cream Cheese
- 2 Tbsp Butter
- ½ Cup Greek Yogurt
- ¼ Cup Cream
- 1 Tbsp Horseradish
- 1 Tbsp Garlic Powder
Instructions:
Make Redskin Mashed Potatoes:
- Boil about 6 Redskin Potatoes with the skins on for 20 minutes or
until fork tender and drain.
- Return to pot and mash well or to the consistency that you desire
- Add 4 oz of Cream Cheese, 2 Tbsp Butter, ½ Cup Greek Yogurt, ¼ Cup
Cream, 1 Tbsp Horseradish and 1 Tbsp Garlic Powder
- Mix well and set aside until needed
Pre Bake Crust:
- Pre-heat oven to 375°F
- Spray down 8" pie plates
- Place half of the croissant dough into one pan and the other half in
the other pan and press it out thoroughly until you have covered the
entire pan with dough
- Bake for 10 minutes at 375°F then take out of the oven and set aside
until needed
Build & Bake:
- Grill up 4 Turkey Bacon Strips and cut into little square or crumble
- Place about 1 Cup of Mashed Potatoes onto each of the pie crusts or
more if desired
- Sprinkle on half of the Turkey Bacon Crumbles (the other half is for
your other pie)
- Sprinkle on ½ Cup of cheese onto each of pies
- Bake for 15 minutes at 375°F or until crust is firm
- Let it sit for a few minutes before cutting
- Plate the Pizza Skin with a dollop of Greek Yogurt in the center
sprinkled with chives. The picture illustrates cilantro because I did
not have chives with me, but wanted the color for aesthetics
These are very filling and a very high calorie meal. Eat at your own risk. You will not be hungry after eating half of the Pizza Skins, but you will want to continue eating.
