DIY Chick-fil-A Fried Chicken & Wings

Inspired by Chick-fil-A's spinoff restaurant Little Blue Menus new wings recipe! Just for fun I decided to fry up an entire Chick-fil-A chicken as well.  All recipe details below...

 THINGS YOU'LL NEED:

  • Deep Fryer
  • Cutting Board
  • Large Bowl or Container To Brine

INGREDIENTS:

Chicken wings & or a Small Chicken
Dill Pickle Chips
Brine

Brine:
5 Cups Hot Water
1 Cup Pickle Juice
½ Cup Salt
⅓ Cup Sugar
2 tsp accent flavor (MSG)
¼ Cup Olive Oil

Dry Rub:
2 tsp paprika
1 tsp black pepper
½ teaspoon cayenne pepper
1 tsp accent flavor (MSG)

Wet Mixture:
1 cup milk
2 large eggs

Dry Mixture:
1 cup all-purpose flour
2 Tbsp powdered non-fat milk
1 tsp baking powder
½ tsp salt
2 tsp sugar
2 tsp paprika
1 tsp black pepper
½ teaspoon cayenne pepper
1 tsp accent flavor (MSG)

INSTRUCTIONS:
  1. Grab some chicken wings or a whole chicken.
  2. Soak them in the brine, which is a mixture of salt, sugar, pickle juice and warm water until the sugar and salt dissolves.  I used pickle juice straight from the jar.
  3. Refrigerate covered for 2 to 3 hours, or overnight.
  4. Mix your dry rub in one bowl, your dry mixture in another bowl, and your wet mixture in a third bowl.
  5. Take the chicken wings out, pat dry, add on your dry rub.  Then toss it into your dry mixture, then into your wet mixture, back into your dry mixture bringing along some drops of wet mixture to form flavor chunks in your breading.  Set in the freezer for 30 minutes to have the breading adhere to the chicken in full.   FOR  THE FULL CHICKEN dry rub and then bake at 350°F for 25 minutes or until almost fully cooked dependent on the size of the chicken and then start at this breading step. 
  6. Deep fry for 6-8 minutes at 350°F until golden brown. Check to make sure the internal temperature of 165°F
  7. Garnish with pickle chips and enjoy!
