I linked up with my friends at Red Panda Noodle to learn all about Xi'an Biang Biang noodles and to test how long we could hand stretch a noodle.

World Record Attempt: Stretching the Longest Noodles
We started by learning how they make them regularly for their customers and then moved on to create a massive noodle in real time for our own and your delicious comedic entertainment.

THINGS YOU'LL NEED:
- Stand Mixer, with Bread Hook
- Pan
- Vacuum Sealer
- Plastic Wrap
- Wok
- One Pot
INGREDIENTS:
- Flour
- Water
- Salt
- Oil
- Fried Chilis
- Bok Choy
- Green Onion
INSTRUCTIONS:
- In stand mixer blend together Flour and water/salt solution until the dough comes off the bottom of the mixing bowl. Roughly 10 minutes.
- Vacuum seal the dough air tight or let rest for at least 1 day to let the dough set. Then press the dough into ovals and imprint a line through the center. Cover In oil and place plastic wrap on top. Let rest over night.
- When the dough is ready find a clean surface to bang bang the biang biang. Take the dough with the tips of the fingers and slap the dough up and down on the counter. Once it gets long take the dough in half and bring the dough over head and then down onto the counter slamming it to create more length. Once it is long take the doughs crease/imprint and open it into an extra long circle noodle. Continue to stretch to add more length.
- In a pot full of boiling water place the noodle in and stir gently. When the noodle floats it's done.
- In a wok on high heat put some oil. Once heated add box choy. Than the noodle and fried chilis. Stir fry and plate topped with green onion.
