Traditionally when preparing a normal size version of this classic dish the egg is pan seared in the center of the bread.
In this case, utilizing an Ostrich Egg, the egg takes upwards of 30 minutes to cook. To guarantee that the yolk does not make the bread soggy we took a different route in preparing this dish. We're super happy with the way it turned out!!
Instructions:
- Start by creating a square baking pan by carefully cutting the bottom out of the Heavy Duty Extra Large Disposable Pan. Slice in half, longways. Use Tin Foil to put the dish back together square, covering all around the Pan. Place on a large baking sheet.
- Preheat the oven to 350ºF
- Make bread by combining active dry yeast, water, and sugar in a stand mixer bowl. Let bubble up, about 5 minutes. Attach mixer bowl to stand mixer. Add lard, salt, and flour (1 scoop at a time, until the dough comes off the bottom of the bowl.) Mix on slow speed for 10 minutes. Set the dough aside and repeat.
- Pour 2 tbsp oil in your prepared square baking sheet. Combine the two dough balls and set it in the middle, lightly coat in oil. Cover with a damp towel or plastic wrap. Place in a warm dry area and let rise for one hour.
- Press the dough down into the pan, flattening the dough and stretching to the size of the square pan. Let rise for another hour.
- Bake for 30 minutes, our until golden brown, and reaching an internal temperature of 190°F.
- While the bread cools cook the egg. Place a large pan on the stove top and bring to medium high heat. Wrap the Ostrich Egg in a dish towel and prop in a medium size bowl. With the back side of a kitchen knife carefully crack open the top of the egg. Pour the egg into the pan. Cook for 3 minutes and place in the oven for 20-30 minutes, until the yolk is white and the center is Orange. Cook to your taste but for this dish shoot for a runny yolk!!
- Place the bread loaf on a cutting board. Using a serrated knife slice the top off of the bread to reveal the giant slice of bread. Brush melted butter on the bread and pan sear both sides. Place on a cutting board.
- Use a large bowl to press a circle into the center of the bread. Use a knife to cut out the final circle. Place on a large Serving Platter.
- Place the cooked egg carefully in the center and dig in!!
This is sure to wow your friends and for most people give them an opportunity to taste Ostrich Egg for the first time.
