INGREDIENTS
- Ground Beef
- Huge Hotdogs
- White American Cheese
- Potatoes
- Oil for frying
Macaroni Salad
- 2 Boxes Jumbo Macaroni (6 cups)
- 2 Cup Light Mayonnaise
- 12 Hard Boiled Eggs
- 4 Tbsp White Sugar
- 3 Cup Chopped Celery
- 4 Tbsp Vinegar
- 3 tsp Spicy Brown Mustard
- 3 tsp Black Pepper
INSTRUCTIONS:
- In a large bowl, add Mayo, brown spicy mustard, vinegar and black pepper. Stir to incorporate well.
- Add chopped eggs, celery and cooked macaroni
- Stir well, Chill before serving.
Hot Sauce
- 3 lb 95% Lean Ground Beef
- 3/4 Cup Tomato Paste
- 3 Tbsp Brown Sugar
- 3 Cups Sweet Onion Chopped
- 3 Tbsp Butter
- 2 Tbsp Oil
- 3 tsp Garlic Powder
- 3 tsp Black Pepper
- 3 tsp Cayenne Pepper
- 3 tsp Chili Powder
- 1 ½ tsp Ground Cumin
- 1 ½ tsp Ground Allspice
- 3/4 tsp Ground Cinnamon
- 3/4 tsp Ground Cloves
- T Tbsp Kosher Salt
- 1 Cup Water
Toppings
Ketchup
Mustard
Diced Onions
INSTRUCTIONS:
- Start with the hot sauce because this will need to marinade at least overnight to gather all the classic Rochester flavors.
- In a large pot over med high heat add oil and butter, melt and then add onions. Cook until soft/translucent
- Add ground beef, cook until slightly browned.
- Add seasonings and water, lower heat to a simmer and cook for 4-6 hours.
Homefries
INGREDIENTS:
- Idaho Potatoes
- Oil
INSTRUCTIONS:
- Dice potatoes into a large dice size. approx. 1"x1"
- Place into a pot of cold water and place over a high heat. season with salt
- Cook until tender, drain, cool
- Once cooled, Deep fry until golden brown and crunchy. Season with Salt
Burgers and Hotdogs
INGREDIENTS:
- Large Hot Dog
- Ground Beef, Rolled into a ball and then smashed into a thin patty using a plate or glass dish.
- Take ball of ground beef and place on-top of a piece of parchment paper. Smash into a thin burger patty using a plate or a glass dish.
- Slice the hot dog open lengthwise, spread open and lay flat
- Place both items onto a preheated griddle to cook. For even more browning/Crispness on the hot dog, use a meat cooking weight.
- Season with salt, flip and place white American cheese slices on top to cover.
- When finished cooking remove from the flattop. Place on cooling tray before service.

- Douse in "Hotsauce"
