DIY Giant Chick-fil-A 

If you follow the directions below you too will create a chicken sandwich made to feed a large family.

THINGS YOU'LL NEED:

 INGREDIENTS:

BRINE:

  • 5 Cups Water
  • 1 Cup Pickle Juice
  • ½ Cup Salt
  • ⅓ Cup Sugar
  • 2 tsp Accent Flavor (MSG)
  • 5 Chicken Breasts
  • 2 oz Activia RM
Dry Rub:
  • 2 tsp Paprika
  • 1 tsp Black Pepper
  • ½ tsp Cayenne Pepper
  • 1 tsp Accent Flavor (MSG)
Wet Mixture For Breading:
  • 1 Cup milk
  • 2 large eggs
Dry Mixture For Breading:
  • 1 Cup All-Purpose Flour
  • 2 Tbsp Powdered Non-Fat Milk
  • 1 tsp Baking Powder
  • ½ tsp Salt
  • 2 tsp Sugar
  • 2 tsp Paprika
  • 1 tsp Black Pepper
  • ½ tsp Cayenne Pepper
  • 1 tsp Accent Flavor (MSG)
INSTRUCTIONS:

  1. Slice Chicken longways in half and marinade in brine which is a mixture of...Water, Sugar, Salt, Accent and Pickle Juice. Brine overnight
  2. Remove chicken from brine and pat dry using paper-towels.
  3. Cover a baking dish with several sheets of plastic wrap. allow for at least 6" of plastic wrap to over hang all 4 sides of the baking dish this is super important as you'll need the additional wrap later on.
  4. Lightly dust with Activia RM "Meat Glue". 
  5. Arrange the first layer of chicken breasts into the desired shape (we are going for the look of one solid chicken breast piece)
  6. Lightly dust that layer of chicken breasts with the meat glue RM. Next apply the next layer of chicken breasts directly over the first layer making sure to fill every hole/gap between all the pieces (we used a couple little pieces of chicken to fill in the gaps). 
  7. If you are doing a third layer like we did, lightly dust that layer of chicken breasts again with the meat glue RM. Finally place the remaining layer of chicken breasts on top, again ensuring no holes of gaps between the layers.
  8.  Tightly wrap up the chicken breasts with the over hanging plastic wrap to ensure the shape stays in place. We covered ours with an additional layer of plastic wrap for added security. We also used crumpled up tin foil again for added safety and ensuring our chicken breasts would glue up in the shape we wanted. A little extra precaution now makes for a much better looking man made breast later.
  9. Place in the refrigerator overnight to fully glue together.
  10. Make the Dry Rub Mixture for the next day ahead of time.

The next Day:
  1. Remove chicken from refrigerator, unwrap. Coat the meat in the dry rub consisting of paprika, black pepper, cayenne pepper and accent flavor.
  2. Make wet breading station consisting of Milk and Eggs
  3. Make dry breading station consisting of AP flour, powdered non-fat milk, baking powder, salt, sugar, paprika, black pepper, cayenne pepper and accent flavor (MSG)
  4. Double Bread the breast by dipping in the wet, then dry, back to wet and finish with dry.
  5.  Deep fry at 325 degrees until golden brown and cooked to an internal temperature of 165 degrees.  Season with salt
  6. Cut the Pickle by using a Crinkle Cut Fry cutter and cutting at a wide angle to make a large bias cut that is only slightly off round.
  7. Build the sandwich with Bottom Bun, Pickles, Chicken Pattie and Top Bun.
