DIY Giant Hot Pockets

You don't have to eat more than one Hot Pocket anymore to get full.  Eat one giant one! 


Ingredients:

Dough
  • Dry Activated Yeast
  • Warm Water
  • Sugar
  • Salt
  • Flour
  • Olive Oil
Filling
  • 1 Pepperoni Stick
  • 1 Block of Low Moisture/Part Skim Mozzarella Cheese
  • Pizza Sauce
  • Tomato Paste
Toppings
  • Spray Oil or Butter
  • Oregano
  • Parmesan
    THINGS YOU’LL NEED:

    Instructions: 

    1. Begin with making the dough.  Preheat the oven to 450°F.  Whisk together sugar, active dry yeast, and warm water in stand mixer bowl.  Sit for 10 minutes.  When foamy place the bowl onto the stand mixer add oil, sugar, salt, and flour (1 scoop at a time).  Change to the bread hook after adding 1 scoop of flour.  Knead for 10 minutes or until the dough begins to pull off the bottom of the bowl.  Take the dough out of the bowl and mold into a ball.  Coat in oil in a large bowl.  Cover with plastic wrap or a damp towel.  Place by the oven for one hour until the dough rises. 
    2. Cube the block of cheese and set aside.  Slice down the pepperoni stick at a bias and set aside.
    3. Mix together pizza sauce with tomato paste.
    4. Put some flour on a clean surface.  Roll out your dough.  Pressing out around the center, shaping into a rectangle to make the size you'd like.  We made sure the size would fit in our microwave. 
    5. In the center of the dough add the sauce then the cheese and pepperonis.
    6. Wrap up the hot pocket by tucking the dough under and pinching the ends.
    7. Bake on a greased baking sheet for 45 minutes or until golden brown and cooked through. 
    8. Let set out to cool.  Cover and freeze over night.
    9. When hungry for a hot pocket heat in the microwave for roughly 15 minutes or until nice and hot!
