While in Jamaica I had the incredible opportunity to taste some authentic Jerk Chicken at the famous Scotchies. It inspired me to get back in the kitchen and recreate it myself.

THINGS YOU'LL NEED:
- Food Processer
- Saute Pan and Lid
- Airfryer
- Cleaver of Big Knife
- Large Cutting Board
INGREDIENTS:
- 4 Scotch Bonnet Peppers, Seeded (Habeneros)
- 1 Bunch Scallions, Roughly chopped
- 15 Garlic Cloves, Pealed
- 1/4 Cup Brown Sugar
- 1/4 Cup Pineapple Juice
- 2 Limes Juiced
- 12 Sprigs of Thyme
- 2 Tsp Ground Allspice
- 3 Bay Leaves
- 2 tsp Ground Nutmeg
- 1 tsp Black Pepper
- 1 Tsp Ground Cloves
- 1/4 Cup Sodium Sauce
- 1/3 Cup Ketchup
- 2 Tsp Apple Cider Vinegar
- 2 lbs Chicken
INSTRUCTIONS:
- Take all of the marinade ingredients and blitz them in a food processor. Set some of the marinade aside to use as a sauce for later.
- Pat dry chicken, season lightly with salt and pepper, and cover in a sealed container. Let sit fro 24 to 48 hours.
- Heat pan to medium high heat and grill both sides of chicken until brown. Place in the air fryer until he chicken gets to 165F. About 15 minutes. Flip and cook for additional 5 minutes to get crispy on both sides.
- Chop the chicken straight through the bone and serve toped with chopped green onion.
- Enjoy with your choice of Scotch Bonnet or Jerk Sauce,
