DIY Pineapple Poke
Julia is at it again with her new segment Julia’s Foreign Junk Food. JFJF for short. This time she’s flown to Hawaii to get her hands on homegrown pineapples and fresh sushi grade ahi tuna to recreate the trending Pineapple Poke. This poke is different than any other poke you’ve had before as it is served inside a pineapple, making the delicious dish even more fun to eat.

Ingredients:
- 1 Pineapple
- 3 Tbsp Sesame Oil
- 1 Tbsp Rice Wine Vinegar
- ¼ Cup Soy Sauce
- 1 tsp Garlic Powder
- 1 Tbsp Minced Ginger
- 1 Tbsp Black Sesame Seeds
- 1 Tbsp White Sesame Seeds
- 4 Green Onions, Chopped
- 1 Lg Avocado, Large Dice
Pineapple Bowl Fixings:
- 1 Seedless Cucumber, Cut into half moons
- 3 Green Chilis or Jalapeños, Sliced
- Sticky Rice
- Sriracha
- Sriracha Mayo
Instructions:
- Start by whisking together sesame oil, rice wine vinegar,
soy sauce, garlic powder, and black and white sesame seeds in a bowl. Stir in
chopped green onion.
- Cut the tuna into a large dice and pour the sauce over top
and combine. Cover and refrigerate for at least 10 minutes.
- While the tuna marinades prep your toppings. Cut
pineapple in half long-wise. Cut and scoop out the pineapple. (What regularly
will be discarded will become your bowl for the Pineapple Poke.)
- Cut cucumber, green chilis, and avocado. Set aside.
- Cook sticky rice.
- Build a bowl. With this feel free to add your favorite
fixings. Start with a layer of rice. Then layer in tuna, avocado, pineapple, cucumber,
and green chilis. Top off with Sriracha mayo and sprinkle on sesame seeds.
- Pick up your pineapple poke, grab some chopsticks, and
dig in. This may be one of the healthiest dishes we've ever made.
