THINGS YOU'LL NEED:

INGREDIENTS:

French Fries 

2 large Russet Potatoes, Pealed

Brine

  • 4 Cups water
  • 1/3 Tbsp Salt
  • 2 Tbsp Sugar
  • 1/2 tsp White Vinegar

Nuggets

  • 1 Pound Ground Chicken

Batter

  • 1 Cup AP Flour
  • 1/2 Cup Cornstarch
  • 1/2 Cup Corn Flour
  • 1/4 Tbsp Salt
  • 1 tsp Sugar
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Black Pepper
  • 1/4 tsp White Pepper
  • 1/8 tsp Turmeric
  • 1/8 tsp Cinnamon
  • 1/8 tsp Cayenne
  • 1 Cup Water
  • 1 Cup Vodka
  • 1 Egg Beaten
  • 1/4 Tbsp Soy Sauce

Sweet Chili Sauce

  • 3 Tbsp White Vinegar
  • 2 tsp Water
  • 2 tsp Cornstarch
  • 1/4 C Light Corn Syrup
  • 6 Tbsp White Sugar
  • 2 tsp Chili Sauce
  • 1/4 tsp Salt (Accent)
  • 1/4 tsp Garlic Powder
  • 1/8 tsp Cayenne Powder
  • 1 Tbsp Tomato Paste
  • 1/4 Cup Gochujang
Cajun Sauce

  • 2/3 Cup Mayo 
  • 1/2 Cup Hot Mustard
  • 1/4 Cup Honey
  • 1 tsp Tomato Paste
  • 1/2 tsp Paprika
  • 1/2 tsp Chili Powder
  • 1/2 tsp Turmeric
  • 1/2 tsp Onion Powder
  • 2 Tbsp Sugar
  • 1 Tsp Accent or Salt
  • 1/2 tsp White Wine Vinegar
  • 2 tsp Lemon Juice
  • 2 Drops Lemon Yellow
Mcdonalds Coke
  • 20% Sprite
  • 80% Coca Cola

INSTRUCTIONS:
  1. To start our BTS Meal recipe you need to prep the McDonald's fries. Peal and cut down the fries shoe string size. Then put them in a brine consisting of water, salt, sugar, and vinegar all whisked together. Let them sit in the brine for at least 30 minutes. 
  2. While those brined up we started up our nugget recipe freezing a pan of ground chicken breast on some parchment paper. Need it to firm up so we can create our shapes. 
  3.  We decided to create molds for the nuggets out of tinfoil. Actually saw Binging With Babish do this and we were like GENIUS! We'll have to add one cookie cut out today, and it's among us, the among us nugget.  So I actually grabbed up the picture of the one on ebay for this cut out.  All we do is fold some tinfoil to make a border and wrap it around the shape of the ball, bell, bone, boot, and among us... and we're ready to press out some nuggs as soon as the chicken has firmed up in the freezer. 
  4. Meanwhile mix together the ingredients for the Sweet Chili and Cajun Sauces in two separate bowls. Set in the fridge until ready to serve.
  5. Now we've got firm chicken so we're going to press our cookie cutters into it and boom perfect shapes. Return to the freezer to retain their perfect shape until we are ready to fry.
  6. Dry Fries and Blanch the fries at 300F for 3 minutes and then lay out to cool on a paper towel lined sheet pan.  Bring the temp of the oil up to 350 for the nuggets.
  7. Make the nuggets batter which is a mixture of flour, cornstarch, corn flour, salt, sugar, ground ginger, black pepper, white pepper, turmeric, cinnamon, cayenne, water, vodka, 1 egg beaten, and soy sauce. 
  8. Pull Nuggs from the freezer and dunk them into the batter.  Removing one at a time, gently place them into the hot oil. Don't drop them in as they then will stick to the bottom of the fry basket.
  9. Once they are golden brown and reach an internal temp of at least 165 degrees,  Take them nuggs out and season with salt. Bring the temp of the fryer up to 400F and double fry the fries for 1- 2 minutes or until light golden brown. Season with salt immediately
  10. Pour yourself a McDonald's Coke by adding 20% Sprite to your coke.  80/20 for the perfect mix.
  11. Serve the nuggets with Sweet Chili and Cajun sauce, a medium fry, and a medium coke.
