This recipe came from three inspirations: an upcoming trip to Mexico, our good friend Alejandro, and the internet. Great recipe to make if you're having a big party! It surely will feed everyone.

If you are serious about making this recipe it could be difficult for you to find the ingredients at your local grocery store. Look in your town for a Mexican market.
Ingredients:
- 2 Giant Tortillas Packags
- Manteca - or Pig Fat, Oil, Lard
- 10 lbs Pork: Ribs, Shoulder, Skin, Stomach
- 2 Oranges
- 1 Mexican Coco Cola
- Shredded Lettuce
- Queso Chihuahua
- 4 Cups Refried Beans
- 2 Cups Spanish Rice
- Tomatillos, boiled
- Avocado
- Cilantro
- 1 Tomato
- 1 Jalapeno
- Mix of Mexican Peppers: Ancho Chilis, Serranno Chilis,
- Pepper corns
- 1 Tomato
- 1 Onion

Instructions:
- Begin with making your meat by preheating your oil/fat to 350F. Once to temp add your pork. Cook for at total of 4 hours. At the 3 hour mark add in Oranges and Mexican coca cola.
- While the pork cooks prepare your salsas. We made one red and one green. For the red salsa rehydrate your peppers and place them in the blender with tomatoes and seasonings. For the green boil the tomatillos until fork tender and place in blender with the ingredients. Blitz.
- Carefully take the carnitas out of the pot and on a cutting board shred meat.
- Place two rows of tinfoil on a long table. Place your tortillas down in a row, slightly overlapped. Add refried beens, Spanish rice, carnitas, shredded lettuce, queso chihuahua, and salsa of choice.
- Grab 3 of your friends/family and roll, careful to tuck in the ends. Roll up in the tinfoil. Now it's up to you if you want to eat like this or cut up and stick in the oven for 25 minutes to get the cheese melt. Enjoy!
