DIY Giant CHEEZ-IT
Follow these directions to make an oversized version of this classic cheesy cracker.

THINGS YOU'LL NEED:
- Kitchen Aid Stand Mixer with Paddle Attachment
- Baking Sheet
- Silicone Mat
- Frying Pan
INGREDIENTS:
Cheez-It Dough (makes 2 Big Cheez-its 8inches by 8 inches)
- 16 ounces sharp cheddar cheese, shredded
- 8 tablespoon unsalted butter, room temperature
- 2 teaspoon salt
- 2 cups all purpose flour
- 4 tablespoons ice water
- Neon Orange Food Gel
INSTRUCTIONS:
- In the bowl of a stand mixer fitted with the paddle attachment, mix the cheddar, butter, neon orange food gel, and salt until soft and homogenous.
- Add the flour and mix on low speed; the dough will be dry and pebbly.
- Slowly add the water and continue to mix as the dough collects into a mass.
- Pat the dough into a flat disk, wrap tightly with plastic wrap, and refrigerate for at least 1 hour.
- Preheat the oven to 375 F. Line one baking sheet with parchment paper or silicone mats.
- Using a rolling pin roll out the cracker to a 1/4 inch thickness and then transfer to the baking sheets.
- Use the tip of a chopstick to punch a hole into the center of each square, and add the edges to make it look like a cheez-it cracker.
- Bake for about 30 minutes or until the crackers are puffed and browning at the edges.
- Immediately move the crackers to racks to cool.
