DIY Japanese Bamboo Noodle Flume 🇯🇵🍜 Nagashi Somen
We went all out on this incredible 2 week journey creating not only the traditional Japanese Somen Noodle Recipe, but also the Bamboo Noodle Slide, which we surprised some friends and neighbors with in the common space of our apartment.
This recipe is delicious with or without the water slide but definitely more fun with. We found online a table top kitchen counter kit that works great but we decided to take it to the next level and do our best to recreate the flume itself.

Instructions:
- Cook your soup base by bringing the sake to a boil in a medium sauce pan. Then add soy sauce and mirin. Add in dry seaweed and bonito flakes and simmer for on low for 5-10 minutes. Take off the heat and cool entirely in the pan (will take several hours). Strain and set in the fridge. This will last several weeks.
- Boil water and add in somen noodles. Noodles are done cooking once they begin to float. About 2 minutes. Strain noodles and run cold water over top. Throw in some ice cubes to chill quicker.
- Use chopsticks to grab noodles and shape into circles, almost donut like, on a plate. Garnish with something green, such as green onion, Thai basil, or micro greens.
- Serve by putting soup base in a bowl with a side of minced ginger, green onion, and togarashi. If you are flume ready have a designated person drop the noodles and get your chopsticks ready to quickly grab up the noodles and place into your prepared soup bowl. Add ginger, green onion, and togarashi to taste.
