Poutine Pizza

Ingredients:


  • 1 Pizza Dough
  • Russet Potatoes (3-5 Large)
  • Mozzarella Cheese
  • Cheddar Cheese Curds
  • Vegetable Oil for Frying

Stout Gravy:


  • 1 Tbsp Vegetable Oil
  • 1 Shallot, minced
  • 2 Garlic Cloves, minced
  • ½ Bottle of stout (Guinness)
  • 3½ Cups of Beef Stock
  • 2 Tbsp Ketchup
  • 1 Tbsp Vinegar
  • ½ tsp Worcestershire sauce
  • 2 Tbsp Unsalted Butter
  • 2 Tbsp All Purpose Flour
  • salt & pepper

Instructions:

Stout Gravy:


  1. In a small sauce pot, heat 1 tbsp vegetable oil over medium heat. Add the shallot and garlic and saute until translucent (for about 3 min)
  2. Add the stout and beef stock, ketchup, vinegar, and Worcestershire and bring to a boil
  3. Meanwhile, in a separate sauce saucepan, melt butter over medium high heat. Add flour and make your roux, stirring until lightly browned (about 2-3 min)
  4. Whisk the stock mixture into the roux and simmer until reduced by half (about 20 min)
  5. Season with Salt and pepper and keep warm and keep aside to use as toppings on the pizza

French Fries:


  1. Hand cut french fries into ½ inch thickness lengthwise and place in an iced water bath for 2 - 4 hours
  2. Dry french fries on paper towel
  3. Preheat fryer to 350 degrees
  4. Deep fry french fries twice in batches
  5. Set aside to use as toppings for the pizza

Pizza:


  1. Preheat your oven to the highest temperature for your oven. We got ours to 550°F
  2. Pre bake dough for 10 minutes
  3. Add toppings and bake again for 10 minutes. Julia added gravy as the sauce and mozzarella slices
  4. Top off with Cheese Curds and gravy.
  5. Slice and Serve
