Fried Rice

Fried rice is a staple in Asian cuisine and making it at home gives you the opportunity to make it taste so much better than your neighborhood Chinese restaurant.  This is because of the ingredients used to make the flavor umami.  Quality rice, fish sauce, soy sauce, and oyster sauce makes all the difference in the flavor.  This recipe is so quick and easy, and thanks to our friend Mark Boyce, one of the most delicious chicken fried rice dishes you will ever have.

Ingredients:


  • 2 Chicken Breasts (sliced thin)
  • 3 Cups Medium Grain Rice (Nishiki)
  • 1 Yellow Bell Pepper
  • 1 Cup Red Onion (chopped)
  • 1 Cup Pea's and Carrots (chopped)
  • 2 Tbsp Fish Sauce
  • 1 Tbsp Soy Sauce
  • 2 Tbsp Oyster Sauce (Lee Kum Kee)
  • 3 Eggs
  • 1 Tbsp Vegetable Oil
  • 5 Medium Garlic Cloves

Instructions:


  1. Being with 3 cups of rice. While rice cooks prepare everything else.
  2. Slice chicken at an angle as if you were shaving it into really thin slices. Season with salt, pepper, garlic powder, onion powder and a dash of cayenne pepper, chili powder if you like it spicy.
  3. Mince garlic, small dice red onion and medium dice yellow pepper
  4. Saute garlic first, then add vegetables in a pan on medium high heat until cooked to your desire (set aside in a bowl after)
  5. Add oil to your wok and toss chicken until cooked through (set aside in a bowl after)
  6. Scramble 2-3 eggs in the wok and set aside with the vegetables
  7. In an empty wok add all of the rice, break it up and add in 1 tbsp vegetable oil, 2 tbsp fish sauce, 1 tbsp soy sauce, and 2 tbsp oyster sauce chicken and vegetables and mix. Play around with these measurements after everything is combined to get the taste you want.
