Taco Bell Grilled Stuft Stuffed Nacho Recipe
So these are one of those things you go to Taco Bell and it just doesn’t look as good as the picture… Until NOW! Actually this taste a lot better too with my unique jalapeño queso.

Ingredients:
- 1 Tortilla Wrap
- ¼ Cup Taco Meat + Seasoning (1 lb per packet)
- 1 Tbsp Low Fat Sour Cream
- 1 Taco Bell Sauce Packet (any flavor)
- 2 Tbsp HeLLthy Jalapeño Queso Dip
- ⅛ Cup Nacho Pieces (got from Taco Bell for FREE)
HeLLthy Jalapeño Queso Dip:
- ¼ Cup Shredded Colby/Jack Cheese
- ⅛ Cup Shredded Cheddar Cheese
- 6 American Cheese Kraft Singles
- ½ Cup Skim Milk
- 2 Tbsp Butter
- 3 Tbsp Pico De Gallo
- ¼ Cup of diced Jalapeños
Instructions:
- Make queso
- Combine all cheese, milk & butter into a small sized pot and let
it melt slowly on medium to medium low heat. If it's too hot the
cheese will burn to the pan. Let this cheese do its thing slowly and
classy.
- Once the cheese is fully melted it will seem soupy, but it will come
together with time, trust me. At this point we can add our pico de
gallo and diced jalapeños.
- Now that we have all of our ingredients in our queso, simply let it
simmer on low heat for as long as you'd like. I let it sit for at
least 30 minutes while I did everything else.
- Cook Meat
- Brown 1 lb of meat, preferably 80/20 for that flavor. The meat will
also break up finer, which will give you that good ol' Taco Bell dog
food meat feeling that you crave.
- I used Taco Bell spice packet, which was easy and made sense. I also
have my own taco seasonings on this website that I use in other
recipes. The 7 Layer Taco Dip Bites recipe has a much healthier
recipe for taco seasoning which you can use for this recipe. It is
generally much lower in sodium.
- The packet will usually have instructions, which will require you to
brown & drain your meat, then add 1 cup of water, bring to a boil
and let simmer for 10 minutes.
Build & Grill:
- Assemble your Grilled Stuft Nacho by first laying out your tortilla
wrap, spreading on your sour cream, meat, queso, sauce packet &
sprinkling on the nachos. Before folding make sure that you shape
your toppings in a triangle shape. It will help distribute the
fillings evenly throughout.
- Fold as shown in the pictures below and then spray down the tortilla
with an olive oil spray and place on a griddle or nonstick frying pan
on medium heat for about 3 minutes or until golden brown. Flip and
repeat.
- At this point you are ready to eat, but if you want it to look like
the commercial, you need to cut into the triangle and manually place
in extra nachos. Then take some extra cheese and place it into a
ziplock baggy and cut a small hole in the corner and squeeze out the
cheese sauce into various areas void of color to add that effect. You
can do the same with the sour cream.
- And there you have it! A professional commercial looking Grilled
Stuft Nacho!
