How To Make Taco Bell Meat
Make this if you REALLY love the beef from Taco Bell. Otherwise follow any other taco beef instruction and you're sure to have a good time. This video and recipe is really just for entertainment.

INGREDIENTS:
- 48 oz Ground Beef
- Ingredients that make up the “other 12%” of Taco Bell's beef:
- 3/4 Cup Maltodextrin (used to enhance texture)
- 1/4 Cup Trehalose (see below)
- 1 Tbs Torula yeast (see below)
- 1/4 Cup Modified corn starch
- 1 1/4 Cups Oat fiber (new... used to use soy - reason is to avoid allergies) *most of the ingredients are used for body builders* ironic joke
- 1 Tbs Sodium hexametatphosphates (drops the ph as well as slows down the starch absorption, allowing for more moisture/fat to used)
- 1 Tbs Lactic acid (stabilizes and preserves)
- 1 tsp Dark Cocoa Powder (color not flavor)
- 3 Cups Water
- Red and orange food color
Seasoning_2% by volume:
- 2 tsp Dried Onion
- 2 tsp Dried Garlic
- 1.5 tsp Ground Cumin
- 1.5 tsp Paprika
- 1.5 tsp Chili Powder
- .5 tsp Cayenne Pepper
- In kitchen aid mixer bowl, combine the ground beef with all dry ingredients, mix well with the dough hook attachment for 1 min.
- In the instapot add water, food coloring, and ground beef mixture. Using your hands (with gloves on), mix well to incorporate.
- Place lid on Instapot and seal well. Set to cook on High pressure for 5 minutes. Allow a natural release for 10 mins, then remove the lid.
- Stir well to make the Taco Bell meat filling come together. Simmer longer if the mixture is not fully thickened using the Sauté feature on the instapot.
- This recipe can be done without a kitchen aid mixer and instapot. Simply mix the meat with the dry ingredients and allow to sit for 10 mins. Then add to a cold pot along with the water and remaining ingredients. Place on medium heat until the mixture comes to a simmer, then lower temp to simmer for 30 mins or desired consistency.
*last time we made Taco Bell meat we used soy (tofu) recently they have stopped using soy (Food Allergies) and replaced it with Oats. They still maintain the 88% meat that is 100% real ground beef and the other 12% being seasonings and fillers (Oats, starches and sugars like trehalose)

*Torula is also known as candida utilis. This type of yeast is a byproduct of the paper industry. During the process of turning wood into paper, torula yeast grows on waste sulfite liquid from the wood pulp. From there, it can be taken and dried into a powder. Most commonly used in flavoring dog food for that beefy flavor.
